Line a large roasting tray with banana leaf. Layer kale leaves, then root vegetables and plantains. Top with pork and chicken pieces.
SEASON & ADD FRUIT
Sprinkle salt over meat. Add pineapple and squeeze lime juice over the layers. Pour coconut milk evenly on top.
COVER & BAKE
Cover with remaining kale and another banana leaf. Seal tray with foil. Bake at 200 °C for about 1 hour until meats are tender and vegetables soft.
SERVE
